if I open a bank account with a bank I owe nothing to, is there any way creditors can take the money WITHOUT going to court?

Assuming none of your creditors currently hold a judgement, then once you have changed banks and are using an institution you do not owe money to, then you creditors will be unable to access those funds without going to court or obtaining your written permission. The only major exception to this is debts owed to Canada Revenue Agency, they have the ability to do many things that a typical creditor is not.
