If payment arrangements made and accepted by creditor are honoured can they at some point decide that arrangement no longer is acceptable and start wage assignment process?

If you are not meeting the minimum term of the original contract then technically a creditor has the right to take more aggressive measures to collect on that debt. So if this new amount isn’t sufficient to meet these original terms then your employer will likely have the ability to start taking legal action and commencing with things like garnishment.
