If a person`s income is creditor proof, can they still get out from under a mountain of debt wihtout filing bankrupcy?

All creditor proof means is that your creditors cannot force you to pay on a the debt. It has nothing to do with dealing with the debt. To deal with the debt you really have to either file a bankruptcy, a proposal or make some other payment arrangements with your creditors.
