How far back will the trustee/creditors look

My trustee has asked for copies of our last three statements from each credit card. Do they normally ask for more than three months and if so why? Also, will we need to provide copies of our home/auto insurance policy or any other documents. I would like to be well prepared.

How far back the trustee will look really depends on the circumstances surrounding your file. Automatically the previous 3 months is reviewed, but in some circumstances activities up to 5 years prior can be examined.
As for what documentation your trustee is going to need, you are best to discuss this with them. Each trustee is a little different in the things they like to see.
